Japanese iced coffee, also known as flash-brewed or flash-chilled coffee, is a quick and easy alternative to cold-brew. While cold-brew needs to be prepared in the evening and let sit overnight, Japanese iced coffee can be made in just 10 minutes. It is made by brewing coffee with hot water directly onto ice, with ⅓ of the liquid in the form of ice, and ⅔ from the pour-over. Fans of this method say that flash-chilling the coffee unlocks a wider range of flavors and aromatics. This is because as the hot coffee drips onto the ice, the ice locks in the flavors while also diluting the concentrate. To make the perfect Japanese iced coffee you need 30g of coffee beans, 150g of ice, and roughly 12 oz of hot water. Grind your beans before putting the ice into your server, and the ground coffee into a rinsed filter over the ice. Pour some hot water around the cone in a circular motion and allow the coffee to steep for 30 seconds. Once you have used up all the hot water, serve the coffee in a glass with additional ice.
